So I replaced my old burned down champion copper plugs with NGK platinums, and my idle went from ok, to horrible. There was a loud knocking, and pretty bad vibration that would come up 20 seconds after coming to an idle and continue intermittently until I gave it gas.

Now, I replaced those stupid NGKs with cheapo copper champions, and most of the problems are gone, but I still have a knocking and vibration. However, now it is much quieter and not as bad as before, but it still makes me mad.

What would this be? Nothing else has changed besides my plugs. I put in a new cap and rotor, same problem. There are no issues with acceleration, just this retarded idling.

I also checked the resistance on my spark plug wires. They all read between 7 and 8, but one is at 5. Could that be why this is happening?

put a set of plug wires on it. Check all grounds. test your coil to be sure it is ok. check ALL conections.
